Easy Beef Empanadas

Ingredients
1 tbs vegetable oil
1 medium onion, diced
1 lb ground beef
2 garlic cloves, minced
1 tsp each salt
1 cup shredded Bowl & Basket Colby Jack cheese
1 15-oz. pkg. refrigerated pie crusts (2 crusts)
1 tsp pepper
1 tsp cumin
1 tsp dried oregano
Directions
- Preheat the oven to 425F.
- Coat a baking sheet with nonstick cooking spray.
- Add vegetable oil to a large skillet and heat over medium heat.
- Saute onion for 5-6 minutes or until softened.
- Add garlic and saute an additional minute before adding ground beef.
- Cook until beef is browned, draining off excess fat.
- Let cool. Unfold 1 crust at a time and cut out 6 or 8 inch rounds.
- Place 2-3 tbsp ground beef mixture on one side of the dough and top with shredded cheese.
- Fold the other side of dough over the top and press edges down with the tines of a fork to seal.
- Repeat to make the rest of the empanadas.
- Place on a prepared baking sheet and bake for 15 minutes or until the empanadas are golden brown.
